BUCKEYES

Ingredients:

  • 1 cup peanut butter of choice

  • 1/4 cup maple syrup

  • 1/2 tsp vanilla

  • 1 cup oat or almond flour (you could also sub for protein powder)

  • 1/4 tsp salt

  • 1 cup dark chocolate

  • 1 tsp coconut oil

Directions:

-If your peanut butter is not naturally runny, put it in the microwave for about 20 seconds.

-In a bowl combine peanut butter, syrup, and vanilla until mixed well.

-Add in flour and salt and stir until you get a dough like consistency. You can use a cookie scoop to measure dough out or just use your hands to form about a 1 Tbsp sized ball.

-After all dough is rolled, put in freezer for about 10-20 minutes.

-While they freeze, add chocolate chips and coconut oil to a microwavable safe bowl and melt in 15 second intervals until smooth.

-Pull out peanut butter balls and use a tooth pick to dip in the chocolate.

-After all are coated, place in fridge for about 15 minutes to harden. Enjoy!
